Mexican Spiced Chicken- A Healthy Alternative
It is possible to have Mexican food and still eat healthy, and Mexican Spiced Chicken is just that! This flavorful recipe mixes grilled chicken, lots of fresh vegetables and common spices. The aroma and colorful plate are sure to please even the pickiest eater. You can choose your own vegetables, but I have found a mix that I like that gives lots of color and nutrition.
2 tablespoons olive oil
1 pound grilled chicken, cut into small cubes
2 tablespoons chili powder
1 tablespoon cumin powder
1 tablespoon paprika
3/4 tablespoon cayenne
3/4 tablespoon salt
1 green bell pepper
1 red bell pepper
1 poblano pepper
1 yellow squash
2 cups mushrooms
3-4 roma tomatoes
Chop up the bell peppers, poblano pepper, zucchini and yellow squash into equal sized pieces. In a large bowl, mix together the spices, then add the chicken and the chopped vegetables.
In a large skillet, heat the oil over medium heat. Add the chicken and veggie mixture and cook for 8-10 minutes. Meanwhile, chop up the mushrooms and tomatoes into equal sized pieces. Add to the skillet, and cook for 5 minutes more, or until chicken is cooked through.
This recipe may be runny and juicy, so I like to serve it over a bed of basmati rice to soak it in. Top with sliced avocado and Greek Yogurt if you desire, and enjoy! It makes a lot, so you will have lots of leftover to enjoy later as well.
